Pumpkin Guts

Guess I need a fall/pumpkin/Halloween-ish post.

                            

Love pumpkins, but I can’t remember carving one as a kid.  I think my Mom must have, but I know I didn’t.  I did carve a bar of soap into the shape of Pac- Man, if that’s consolation.
Even with my own kids, we usually just decorate the outside of the pumpkin per school rules for class contests (Pumpkin Saturn, Pumpkin Godzilla, and Pumpkin Elvis) but we’ve rarely had the time, or energy, in the chaos of October to carve.   Besides, we already had Elvis in furry mutton chops rotting on the front step.
But, I really like being a Craftsy kind of Mom, so this year we pulled out the carving saws I got in a post- Halloween sale. 
My son generously let me and my daughter each do about half a sawing motion, then he claimed the tools and got down to business.

The results were pretty cool.
Then I finished off my Martha moment by toasting the pumpkin seeds.

Toasted Pumpkin Seeds:

Rinse seeds
Add to water (2 cups per 1/2 cup seeds)
Add 1 Tbspn. salt per 1/2 cup of seeds 
Bring to boil and simmer 10 minutes

Pour about a Tbspn of olive oil on a baking pan 
Put seeds in pan in one layer

Bake 10 to 15 minutes at 400 degrees
I did it!  I am Super Mom!  At least for a while.  Now, to explain why I won’t put 50 blow up Christmas decorations in my yard.
